Our Beer

- All our malt is sourced from Warminster Maltings the only floor malting in the south of England

- We only use Whole Flower Hops

- We use a Batch Sparge mash process which minimises the extraction of tannins and contributes to a better flavoured beer

- We have a dual cooling system combining both immersion and a heat exchanger to rapidly cool the hot wort and produce clearer better tasting beer

- Our beer is unfiltered Natural Beer with no additives.

- PLEASE NOTE OUR NEW YEAST ENSURES OUR BEER IS CRYSTAL CLEAR!

- All our beer is conditioned at the Brewery for as long as possible. Depending on the ABV we will not release a beer for many months and it is this extra conditioning that sets our beer apart.

Please note Natural Beer tends to keep much longer both before and after spiling, than fined beer, so if you are a publican and your ale takes a week to sell this is the beer for you !

Dark Matter Pump Clip

Dark Matter - Dark Ale - now available

ABV 5.5%. A dark, full bodied Ale. Not as dark or roasted as a stout or a porter,  but with a complex grain bill sure to tantalise your taste buds. The initial flavour is roasted malt with spicy floral hops and a fruity but dry bitter finish.

Lashings of Chocolate Malt mean this beer improves with age but as always is well conditioned before leaving the brewery.

This beer contains a generous amount of Wheat Malt which gives excellent head when served in good condition.  In terms of comparisons our brewer thinks this beer has similarities to Riggwelter from Black Sheep

English Electric Lightning  - Summer seasonal

ABV 6%. English Electric Lightning will celebrate not only the English Special Bitter style, but also one of the truly magnificent feats of British Engineering. The English Electric Lightning was our very own Mach 2 Cold War Interceptor which still even in 2012 holds many time to altitude records.

A Classic English Special Bitter Style using Maris Otter Pale, Crystal & Amber Malt. Half of this is provided by late hops. The Hops used are Challenger & Pioneer.

A burnished orange colour like a Lightning engine on reheat. This beer has a pleasant citrus/fruity &  floral hop aroma. A rich biscuity malt flavour with a combination of flavours from the hops. Hints of seville orange, citrus and fruitcake. SRM 9, IBU41

Baseline Brewing - Halcyon Hop Haze 4% ABV

Halcyon Hop Haze  - call for availability -ABV 4%

New improved receipe with a small addition of Carapils for better head and revised hopping strategy costing twice as much but packing much more of those aromatic essential hop oils that hopheads love. A straw coloured Pale Ale with a simple grain bill. Mainly Warminster Maris Otter Pale Malt. This beer uses one hop variety the American Chinook. In days gone by this hop would have only been considered suitable for bittering purposes. However tastes have changed and Chinook is now very popular as an Aroma hop.

Considerable amounts of dry hopping give this beer a very slight natural haze (it is also unfined). The hops give plenty of aroma and a spicy, resinous, grapefruit flavour.  The malt being such high quality as we expect from Warminster compliments this hoppy beer very well.  SRM 4, IBU 47

FLYING FORTRESS IMPERIAL PALE ALE

Flying Fortress - Imperial Pale Ale  - Special Order min 5 casks

 

ABV 9%. A very big beer that is matured for 6 months before release. Available only in very limited quantities, once per annum, this is one to look out for. A complex beer with Maris Otter Pale, Crystal, Wheat & Amber Malt. Hop backbone is from Pioneer & Chinook. Dry Hopping in two stages with Pioneer & Chinook Hops. SRM 16, IBU 77

Sussex Subwoofer Stout 5%  -  winter seasonal

A modern take on a classic. Using the Admiral Hop from the UK. This hop has a pungent resinous, orangey, citrus aroma in the rub. It’s the perfect compliment to the Dark Roasted barley together with Chocolate Amber & Wheat Malt. SRM 35 IBU 43

Sussex Subwoofer Stout

Rebel Alliance- India Pale Ale  - autumn seasonal

A “proper” IPA at 6.5% ABV this beer recalls the alliance between the Mughal Empire and rebels from the British East India Company, in the first Indian Uprising of 1857. The end result of the rebellion was the disbanding of the Mughal Empire as well as the East India Company, and the establishment of the Raj. An alliance of British Hops (Admiral) and American (Cascade & Chinook) combine to make this  delectable beer the perfect compliment to Indian food or on its own.

Englander Weissbier - 4 %   - spring seasonal

German by name but English by nature. This beer doesn’t comply with Berliner Weisse wheat content, nor does it taste like your typical Wheat Beer. This beer is an original English take on a German style. Using just Maris Otter Pale and Wheat Malt from Warminster together with Cascade (UK if we can get it or the US version) and Admiral Hops we’ve created a very refreshing session beer. More heavily hopped than a traditional Wheat Beer we layer the hops to maximise the nose and flavour of both varieties. Floral and Fruit nose and flavour with more citrus than a typical wheat beer.

Baseline Best Bitter - 4.5 %   - please enquire

Most breweries offer a Best Bitter so we thought it time we joined the bandwagon. We think this is a beautifully balanced beer, using British Malt and Hops with a little Carapils for a better head. Mainly Maris Otter with a little Crystal this beer has a lovely bisuity malt flavour with a nicely aromatic hoppy nose and flavour. The hops used give the beer a nice combination of zesty citrus with notes of candied fruit. Recently revised to 4.5% from 4 and slightly more bitter. An even better Best!

Decibel DnB - Dark n Black Hop Ale - Winter seasonal

ABV 5.3% A hit of Dark Fruit followed by a rich well balanced roasted malt finish. We use over 5kg of fresh whole leaf hops to make Decibel.

It’s musically inspired Ale. With a staccato hit of complex dark fruit & a hint of spice and citrus. Complimented by a rolling reggae bassline of Roasted Malt.

MASH UP - A fusion of Czech Pilsen and English Pale Ale Styles

MASH UP- A fusion of Czech Pilsen & English Pale Ale

Spring and Autumn Seasonal

ABV 4%. Beer is something of a religion in the Czech republic and they invented the most copied style of beer in the world with Pilsen. Back to the UK, and we, of course are kings of our very own style - Real Ale - that is something uniquely British.

Mash Up fuses the two styles together. We take a combination of finest Bohemian Malt and Czech grown hops and marry them with Britains finest Malt - Maris Otter and one of the classic British Hops, First Gold. The result is a pale, zesty refreshing beer with a balanced malt profile combining perfectly the delicate Bohemian Malt with the Biscuity Maris Otter. The bitterness is sharp and refreshing and moreish with Citrus, Spice and Orange with some herbal notes from the Czech hops. SRM 3, IBU 43

BAD CODE- A seasonal special with 5 hops

 

ABV 4.5%. Inspired by completing an Ecommerce project and realising that modern e-commerce software is now so complex and cumbersome that you need ever more powerful hardware to run it on. Back in 1983 Jetpac on the ZX Spectrum ran within 16KB. Nowadays, even Adobe reader, which as far as I know just reads documents, is 135MB (that’s 138,240KB). The world is so wasteful on so many levels that even efficient coding is a thing of the past. This beer is a celebration of a piece of simple but bad code, but is a banging beer. Using a combination of new world and old world hops from USA, UK and Europe this Fruity pale is the perfect antidote to the wasteful world we live in. Made with less energy and less waste water than most breweries the only thing to bear in mind is not to take the code too literally...

Gold Admiral - A new seasonal British Golden Ale

ABV 4.9%. A simple recipe of Maris Otter Pale Malt, with some wheat malt for a lasting head and glass lacing. Combined with First Gold and Admiral Hops from Sussex and Sussex Chalk Filtered water and you  have a classic sessionable 4.9% Golden English Pale Ale.

Hop Descriptions

First Gold: "Flavour and Aroma It has a wonderful tangerine, sweet orangey citrus aroma and slender spicy notes.  Its flavours are of marmalade, geranium, magnolia, sweet and floral."

Admiral: "Flavour and Aroma. Admiral has excellent high flavour notes which are orangery, citrus and herbal."

Treble Classic Pale Ale
Treble - A new seasonal Pale Ale
ABV 4.7%. I wanted to show off the beautiful flavour characteristics of the oldest hop of all - Brewers Gold. Before Brewers Gold only Hops of unknown parentage were grown. Brewers Gold a cross of a Wild Manitoban BB1 and unknown English Wild hop led to Brewers Gold. Although originally grown in England it is seldom grown here now, mainly in France & Germany.
Brewers Gold may be the old boy of hops but it spawned hops such as Galena, Horizon, Centennial & Nugget, and it has a more new world flavour than old world courtesy of its strong link to the Manitoban hop. Maltwise it is the old favourite Maris Otter Pale and this beer has a lovely fruity aroma and flavour with just a hint of spice. Tropical fruits evident as well.
